This agribox contains pastries of Apulian tradition.

Apulian pastries are exclusively handmade and are ideal for refined, tasteful and healthy palate.

The agribox contains:

  • organic Senatore Cappelli stoneground ancient whole grain wheat flour cartellate, 350 gr.;
  • organic Senatore Cappelli stoneground ancient whole grain wheat flour fagottini, 350 gr.; the filling is made with Filippo Cea organic blanched and toasted almonds crumbled and kneaded with organic rice malt, lemon skin and anice – 300 gr.;
  • cooked wine, the result of slow and long stewing of figs that become a thick, sweet syrup – without adding any sugar – 250 ml.

Recommendations:

In order to top pastries with cooked wine properly we recommend you to pour it in a saucepan and dilute it with water. Then, keep the saucepan simmering for a little and make sure you do not get liquid cooked wine.

Set pastries on a tray just before cooked wine fully grows together

Product Description

Cartellate used to be depicted on cave paintings dating back to VI B. C. and were given to deities to invoke for blessings on harvest.

The process of making cartellate is divided into two phases. Firstly, you need to: cut the dough into 2-inch-wide thin and long strips; wrap each strip around itself to form a loose coil; then, roll to form little wheels with several indentations and to shape them like a rose.

To make calzonelli you need manual skills. Once you have made a thin dough for the outer shell, you need to add the almonds paste in small portions; then wrap the pasta around the filling and cut it with a fluted pasta cutter wheel. It will look like a tiny raviolo.
